I have to head to Union-busting Foods tomorrow for my smoked salmon, and I'll add a look for the smoked tofu. Soy Deli brand, incidentally, makes a "Savory Baked Tofu" that is a decent substitute for smoked tofu in a pinch. Vietnamese baguettes? Why, Ai Hoa or maybe 99 Ranch, at least here in L.A. :-) Well, that’s cool! I have to head to Union-busting Foods tomorrow for my smoked salmon, and I’ll add a look for the smoked tofu.

I'd never had it until I went to this salad joint near my office for lunch one day and just fell in love with the stuff. It's got a very firm texture, and the smokiness is fabulous.
